Vegan Pumpkin Spice Pancakes


It's that time of  year again when pumpkin spice sounds so good.  If we do say so ourselves, these little pancakes are a winner! They taste so yummy and smell soooo good cooking.  We will be making lots of these this autumn and hope you like them too.


INGREDIENTS:

3 TBSP vegan butter
2 TBSP maple syrup
1/2 cup pumpkin puree
1 1/4 cup flour
3 tsp baking powder
1/4 tsp salt
1 tsp ground cinnamon
1/4 tsp nutmeg
dash of ginger and cloves
1 1/4 cup of almond milk, soy milk, or coconut milk



DIRECTIONS:

Melt the vegan butter, add in maple syrup and pumpkin.  Sift together dry ingredients; flour, baking powder, salt, cinnamon, nutmeg, ginger and cloves. Add in almond milk. Place on warm skillet, flip when bubbles begin to form on top. When the other side is browned, place into oven on oven safe plate to keep warm.  Serve with cinnamon and sugar, syrup, or anything else you can dream up!
